History & Origin
Jollof takes its name from the historical Jolof or Wolof world of Senegambia and developed into many national forms across West Africa. This tomato-red party style follows Nigerian and Ghanaian home techniques: reduce the pepper base well, then steam long-grain rice gently so each grain absorbs the sauce.
