History & Origin
Suya is a northern Nigerian street food with Hausa roots, sold from evening grills by specialist vendors known as mai suya. Thin strips of meat are coated in yaji—a peanut, chilli and spice mixture—then grilled quickly and served with raw onion, tomato and extra spice.
