History & Origin
Fresh Vietnamese rolls, often called gỏi cuốn, wrap herbs, rice noodles, vegetables and usually pork or prawns in softened rice paper. Unlike fried spring rolls, they are served cool and depend on freshness, careful rolling and a strongly flavoured dipping sauce.
