Hāngī is a traditional Māori earth-oven method in which food is steam-cooked over heated stones in a covered pit, often for gatherings and large groups. This oven version does not replicate the cultural process, but uses tightly wrapped, slow steam-roasting to suggest its tender texture and gently smoky character.
