Kung pao chicken is a Sichuan dish traditionally linked with Ding Baozhen, a Qing-era official whose title was gongbao. The classic flavour is savoury, tangy and mildly sweet, with dried chillies, Sichuan pepper and roasted peanuts rather than a thick sugary sauce.
