History & Origin
Katsu belongs to Japan’s yōshoku tradition of adapting Western-style dishes in the late nineteenth and early twentieth centuries. A cutlet coated in airy panko became distinctively Japanese, and chicken katsu is now served with shredded cabbage, rice, curry or tangy tonkatsu sauce.
